Introduction
I found a recipe online for rice pudding, and I figured it could easily be altered to be more health conscious. :) No fat, and 50 calories a serving. Ingredients

2 to 3 cups cooked rice
3 cups skim milk
1/2 cup splenda
1 tsp vanilla extract
1 tsp cinnamon
1/2 tsp nutmeg
1/2 cup raisins (optional, not in nutrition info)
Directions
In a medium sized pot, mix the rice, milk, splenda, raisins (if using) and vanilla.
Cook over medium heat for about 25 to 30 minutes, or until the liquid is mostly absorbed, stirring often to keep from sticking.
Mix in cinnamon and nutmeg, and cook another 5 minutes.
Serve immediately to add warmth on a cold night, or cool in fridge for a refreshing treat.
Makes approx. 10 - 1/2 cup servings.
