Number of Servings: 40

Ingredients

    4 Cups (500 g) Whole Spelt Flour
    4 Cups (500 g) White Spelt Flour
    1 Tbsp (12 g) Active Dry Yeast
    2 Tbsp Sunflower Oil
    3 Tbsp (36 g) Cane Sugar
    3.5 Cups (840 ml) Water

Directions

Sift flower, add all other ingredients. Mix by hand or with the dough attachment on a hand mixer. The dough will be quite moist and gooey. Cover, set in a warm place, and let rise 1 hour.


Uncover, mix with a spoon to punch out all the air (it will be too sticky to punch down by hand) and pour into two loaf pans. Preheat oven to 350 F (180 C) for 15 minutes, all the while letting the dough rise a bit more in the pans.


Bake for 35-40 minutes, until tapping at the bottom of the loaf yields a hollow sound.


The serving size assumes that each loaf is cut into 20 slices. 1 slice = 1 serving = 42.5 grams.


Freezes very well, defrosts well in microwave.
