Ingredients

    1 tbsp butter
    1 tsp minced garlic
    1 small Yellow Onion, chopped
    1 lb {16 oz} chicken breast, diced {can use canned or fresh}
    1 can Diced Tomatoes and Green Chilies
    1 can Ro*Tel Mexican
    1 can Pinto Beans, drained & rinsed
    1 can Whole Kernel Corn, drained
    4 cups Chicken Broth {2 cans}
    1 envelope Ranch Dip and Dressing Mix

Directions

Set stove to med-high heat. In a large pot add Butter, Garlic, Onion and Chicken. Saute until onions are soft {if using raw chicken breast saute until breast chunks are white}. Add Diced Tomatoes and Green Chilies, Ro*Tel Mexican, Pinto Beans and Corn. Stir contents together. Add both cans of Chicken Broth and then add envelope of Ranch dip mix. Stir well, bring contents to a boil, reduce heat and simmer for 20 minutes.

Or, combine all ingredients at once into a large crock-pot, turn heat to medium, and let simmer all day.
