Introduction

This is a cool dessert for a summer day. It reminds me of those ice cream bars I used to eat as a child. This is a cool dessert for a summer day. It reminds me of those ice cream bars I used to eat as a child.

Ingredients

    Cake:
1 Box Pillsbury Reduced Sugar Classic Yellow Cake
    1 cup water
    1/3 cup unsweetened applesauce
    3/4 cup egg substitute
.6 oz box Jello sugar free orange jello
    1 cup boiling water
    1 cup cold water

    Icing:
1.5 oz Jello sugar free vanilla pudding
    1/2 cup skim milk
8 oz crushed pineapples (No sugar added)
8 oz package fat free cream cheese
8 oz package sugar free cool whip

Directions

Mix the cake mix, applesauce, egg substitute, and 1 cup water. Bake according to directions in two 9-inch cake pans.

When cake is finished, poke holes in it using the end of a wooden spoon or something similar. Mix orange jello mix, 1 cup boiling water and 1 cup cold water in separate bowl. Pour mixture over both pans of cake and refrigerate for at least 1 hour.

To make icing, mix pudding mix, milk, pineapples, cream cheese, and cool whip. Stick in the fridge with the cake.

When the cake is cooled, icing and serve cold!

The box says this makes 12 servings. I've never measured before.
