Ingredients

    1 6oz. can crabmeat-drained
    3 tablespoons bread crumbs
    ΒΌ cup cheddar cheese (or whatever cheese you prefer)
    Cooking Spray
    2 tsp. lemon pepper seasoning (or Cajun or whatever seasoning you prefer)
    4 3.5 oz. tilapia fillets
    Sea salt and pepper to taste
    1 cup cooked brown rice
    4 cups salad
    2 tbsp. salad dressing of your choice
    1 cup broccoli, cooked

Directions

Mix all except for the tilapia in a bowl. This will be the stuffing. Spray the baking dish with a non-stick spray. Place filets in the pan and spread stuffing mix over each fillet and roll (place a toothpick in the middle to hold if you like). Season the fish and bake at 425 for 10-15 minutes or until fish flakes easily with a fork. Serve with rice, broccoli and salad.
