easy, balanced snack/side dish - I made this one up when I had leftover broccoli, a package of biscuits and wanted a side dish to go with my burger for dinner. Ingredients

    This recipe makes 8 servings - nutritional information is per serving


    1 can Pillsbury Grand Reduced Fat Golden Wheat Biscuits
    2 cups cooked broccoli (fresh or frozen) drained
    8 oz grated or sliced mozzarella cheese

Directions

Preheat oven to 375

Using a little whole wheat flour, dust a surface and roll out the biscuits to about double the original size.

Layer on cheese and broccoli

Fold the biscuit over to form a turnover or pocket, pinch the edges to seal. Place 4 pockets on each of 2 baking sheets leaving room for expanding while cooking

Bake at 375 for 12 minutes or until golden brown.

I would expect you could create other pocket sandwiches using different veggies, or adding meat - maybe even a pizza pocket.
