Ingredients

    *Flour, white, 1 cup
    *Whole Wheat Flour, 1 cup
    Oats, .5 cup
    Cinnamon, ground, 2 tsp
    baking powder 2 tsp
    Baking Soda, 1 tsp
    Salt, .5 tsp
    banana,1 ripe mashed
    Brown Sugar, .5 cup, packed
    Vegetable Oil, 2 tbsp
    Egg, fresh, 2 large
    Buttermilk, lowfat, 1.25 cup
    Vanilla Extract, 3 tsp

Directions

Preheat oven to 400 degrees
Line 12 muffin tray
Combine flours, oats, cinnamon, baking powder, baking soda, salt and mashed banana, blend on low speed for approx 2 minutes.
Add brown sugar, oil, egg and buttermilk blend for 2 min med speed.
Add vanilla extract and mix until well combined.
Fill all muffin spots as evenly as possible.
Bake at 400 degrees for 15 minutes,
Makes 12
