Introduction

Ingredients

    5 - 6' corn tortillas
    2 tbsp butter (i use the "i can't believe" stuff)
    1- 14oz can of enchilada sauce ( i recommend El Pato brand)
    1/2 cup of shredded mozzarella cheese
    salt and pepper to taste

Directions

Cut the tortillas into bite size pieces and add to a sauce pan along with butter. Do a few pieces a time so they all get crispy, to many at once and they'll just stick together. Once the tortillas are crispy add the salt and pepper and the can of enchilada sauce. Mix well to cover all the tortillas and to heat the sauce. Turn off the heat and add the cheese on top of the chilaquiles. Serve!

Makes about 4 servings

This is a great meal you can make any time, serve with some fruit for a yummy breakfast, a side salad for lunch, or some rice and beans for a great dinner!
