Ingredients

    *2 tbs lime juice
    *2 tbs fish sauce
    *2 scallions, thinly sliced crosswise
    *2 tbs chopped cilantro
    *1.5 c fat free soy milk (plain)
    *0.5 tsp coconut extract
    *1.5 c chicken broth/water
    *1 c fresh broccoli florets
    *2 stalks lemon grass
    *3/4 lb boneless chicken, bite-size chunks
    *1 c sliced mushrooms

Directions

1. In a large bowl, combine lime, fish sauce and green onion. Place by your stove along with a bowl containing the cilantro.

2. In a medium sauce pan, combine the soy milk, coconut extract and the chicken broth and boil on medium-high heat. Stir in the broccoli and lemongrass. Add the chicken and mushrooms, return to a gentle boil and simmer until the chicken is cooked (10 min)

3. Remove from heat and pour over the herbs/seasonings. Stir, serve, and garnish with cilantro.
