Introduction

Delicious Indian Naan bread makes a perfect flavorful crust for this pesto pizza topped with another flavorful burst of veggies. You can substitute any other vegetables you like, but this combo is my favorite. Friends love this pizza too, and it's way more sophisticated, and healthier, than Domino's. Ingredients

    - 2 Whole Wheat Naan Bread (Usually comes in packs of 2, and can be found at most heath food stores)

    -2 Tbsp. "Napolean" Green Pesto Paste(this is actually lower calories than the sauce listed for nutritional calculations)

    - 2 Tbsp. Extra Virgin Olive Oil

    - 1 cup Fresh Spinach (chopped)

    - 1/2 cup Fresh Crimini Mushrooms (sliced)

    - 3/4 cup Yellow Bell Pepper (diced, or cut in strips, your preference)

    - 1/4 cup Red Onion (diced)

    - 1oz. Part0Skim Mozzarella Cheese (shredded) (optional)

Directions

-Preheat oven to BROIL.

-In a small bowl mix together 2 Tbsp olive oil with 2 Tbsp Green Pesto Paste.

-Place the two Naan breads on the cookie sheet flat side down (no need to grease pan). Spread the pesto mixture evenly over bread using the back of a spoon.

-Put bread in the oven for 3 minutes. This sets the flavor into bread, and gives the crust more crunch.

-While bread is cooking, chop your vegetables (Spinach, Mushrooms, Yellow Peppers, and Red Onions) and grate 1 oz. Mozzarella Cheese.

-Lower oven temperature to 400F.

-Remove the bread from the oven, and begin to layer fresh vegetables( spinach and mushrooms should go down first so they don't dry out, then the peppers and onions).

-Sprinkle the cheese over both pizzas.

-Place pan in the oven for 15-20 minutes, or until vegetables look cooked and pizza crust is toasted.

-Remove from oven, let set for about 1 minute.

-Cut each pizza into 4 pieces. Each serving is two pieces.

-Serve hot and yummy!
