Ingredients

4 boneless, skinless chicken breasts
2, 14.5 oz cans of chicken broth
4 heaping teaspoons of chopped garlic
2 tbsp olive oil
.5 tsp oregano, dried
1 tsp basil, dried
2 tbsp lemon juice
4 tbsp cornstarch
salt and pepper to taste
Directions
Makes 4 servings
Rinse and pat dry the chicken. Sprinkle salt and pepper on both sides of the chicken.
In a large skillet, over medium-high heat, heat up oil. Add garlic and chicken to the hot oil. Cook chicken on both sides until slightly browned (about 5 minutes on each side).
When chicken is browned, add chicken broth, oregano, basil and lemon juice. Bring to a boil. Turn heat down and simmer until chicken is done (between 20 and 30 minutes).
Take chicken out of the pan. In a separate container, put cornstarch in with enough broth from the pan to make the mixture runny but not too watered down. Bring broth to a boil, slowly stir in cornstarch mixture, stirring constantly. Bring back to a boil, boil for 1 minute and then let stand for two minutes. Sauce should have thickened.
Spoon sauce over chicken breasts and serve.
