Introduction

Ingredients

    3 cups raw cabbage- shreddeded
    1cup raw onion
    2 cups fresh mushrooms
    1tbsp olive oil
    1 tsp salt
    1 tsp cumin seeds
    1 block of extra firm tofu- cubed
    1tbsp curry powder

Directions

Heat a heavy sauce pan with the olive oil. Place the onions into the oil and sautee on a low flame for 6-7 minutes. After onions are soft, combine with tofu, salt and spices and continue to sautee for 5 more minutes. Add the rest of ingredients and sautee with cover for an additional 7 minutes. After this, stir all ingredients and continue cooking with the lid on for another 13 minutes, occasionally stirring. Take the lid off and continue to cook for another 6 minutes to reduce liquid. Remove from fire and allow to cool for 4 minutes. Put it into a pita with a splash of hot sauce or use as a side dish by itself.
