Introduction

Ingredients

    1 tbsp. olive oil
    1 medium carrot, diced
    1 medium onion, diced
    1 large celery stalk, diced
    2 cloves garlic, minced
    3 cups chicken broth
    1 tbsp. tomato paste (optional)
    2 1/2 cups vegetables of your choice
    1/4 cup brown or mixed rice
    1/4 cup quinoa
    1/2 cup dried lentils, any type
    1/4 tsp. sea salt
    1/4 tsp. pepper
    3/4 tsp. dried herbs of your choice
    Fresh herbs (optional)

    Saute onions, carrots and celery in olive oil until softened. Add all the remaining ingredients and bring to a boil. Reduce to simmer and cook for about 20 min.
