Introduction

The Tabouli recipe is a healthful and delicious Mediterranean food recipe prepared with quinoa, mint, garlic, tomatoes, green onions, olive oil and lemon. An excellent picnic food idea, it tastes great chilled or at room temperature.

The original recipe used 2c cracked wheat soaked for 30 min in hot water then wrung out and added into the salad. I added the quinoa instead.

Ingredients

    2 cups quinoa prepared per box instructions
    1 cucumber, chopped
    2 small tomatoes, chopped
    1 bunch green onions, (8) sliced
    1/2 cup fresh chopped mint
    2 cups fresh chopped parsley
    1 clove garlic, minced (optional)

    Dressing:
    1/2 cup fresh lemon juice
    3/4 cup extra virgin olive oil
    1 tablespoon pepper
    2 teaspoons salt, or to taste



Directions

Combine the salad ingredients, including quinoa, in a medium bowl.

Mix the dressing ingredients together and stir into the salad mixture.

Serve chilled or at room temperature.

    Very Good
    This recipe was super easy to make, easily modified and yummy. I used less olive oil as I prefer mine a little drier and also cut out the mint. - 7/11/12

    This might be a stupid question, but is it two cups of already cooked quinoa or the yield from two cups of dry quinoa prepared? - 9/6/11
