Introduction

This soup smells wonderful and the beans make it very filling. Try using different types of beans for variety. Lentils work well in there too. You could even omit the turkey sausage to make it vegetarian or just to cut the calories. This soup smells wonderful and the beans make it very filling. Ingredients

    Half of a medium onion, chopped
    2 1/2 tsp minced garlic
    16 oz tomato sauce
    1 can diced tomatoes w/basil, garlic and oregano
    1 package turkey smoked sausage, diced
    3 stalks of celery, chopped
    1- 16 oz can black beans, drained and rinsed
    1-16 oz can great northern beans, drained and rinsed

Directions

Drain and rinse beans if using canned. If using dry, make sure you have soaked and drained them. Add all ingredients to stock pot or crock pot and let simmer at least an hour to allow the flavors to meld together. Also can be placed in a crock pot on high for about an hour or on low for several hours if you want to make it in the morning and have it waiting for dinner. Enjoy!

    Incredible!
    Made this with a few changes to lower the sodium and use what I had on hand. I had about 8oz ground turkey but no sausage. And just realized I added 2 cans of no salt added diced tomatoes instead of 1. A little seasoning and it was great! Thanks for sharing. - 1/16/21

    Incredible!
    Made this tonight, however, substituted beans for 1/2 bag of 18 beans . Only had an 8oz can of tomato sauce, so I added that plus about 16 oz water. Lastly added 3/4 buillion cube and also a little bit of cabbage. Had to use what we had and it came out AWESOME!! The hubby LOVED it! - 6/4/09

    Very Good
    I made this in my crock pot today and it was so easy! I went to the store and when I got home I walked in the door and it smelled so good I had to try a small bowl! It was very good.
    I did add a small can of green chiles but othewise followed the recipe.
