Introduction

Really good! A nice change from the usual lettuce salad which until now, is the only type of salad I thought there was. :P I didn't add the walnuts but I think they would have tasted wonderful - oh, and I served cold. Yum!

Number of Servings: 5

Ingredients

    2 tsps ground flax seed
    2 tbsps hot water
    1/4 cup orange juice
    2 tbsps apple cider vinegar (another fruit vinegar of white wine vinegar will work too)
    1/2 tsp Spanish paprika
    1/4 tsp cumin
    4 large carrots, grated
    3-4 small seedless oranges, peeled and sectioned
    2 tbsps walnuts (optional)

Directions

---Put the ground flax seeds in a small bowl and add the hot water. Stir and allow to sit until thickened, about 5-10 minutes. Then add the OJ, vinegar, paprika and cumin.

---Grate the carrots. Put them in a bowl and immediately add the dressing, mix well. Fold in the orange sections and sprinkle with walnuts.

---Serve cold or at room temperature.
(1 cup = 1 serving)
