Introduction

YUMMMY. I love potato soup, but it is really high in calories. I tweaked a recipe and came up with this low calorie version. YUMMMY. I love potato soup, but it is really high in calories. I tweaked a recipe and came up with this low calorie version.
Number of Servings: 8

Ingredients

    Potatoes, carrots, onions, skim milk, smart balance light buttery spread, lean turkey bacon, chives, cheddar cheese, fat free cream cheese, salt and pepper to taste.

Directions

Peel and chop up all vegetables (you can add celery too if you want) and cover with water and bring to a boil covered. Meanwhile, take butter, milk and cream cheese and soften if needed in the microwave. Beat with an electric mixer until smooth.

When vegetables are cooked for about 12-15 minutes and are soft, drain them and then add the dairy mixture and put on low heat. Stir when needed.

Chop up chives, shred cheddar cheese and cook turkey bacon. Use them as toppings for the soup.

Salt and pepper to taste and serve.
