Introduction

I tried to recreate the recipe my mom used to make on Fridays during Lent when I was a kid growing up. I tried to recreate the recipe my mom used to make on Fridays during Lent when I was a kid growing up.

Ingredients

    2 6-oz cans wild Alaskan salmon, rinsed and drained
    1 rib celery, chopped
    1/4 c onion, chopped
    1 t dried dill
    2 large eggs
    .5 c Progresso Italian style bread crumbs
    The juice of half a lemon
    The zest off of that lemon half

Directions

Mix all ingredients together and form into 4 patties. Place in refrigerator for at least half an hour before grilling. Grill on foil sprayed with pam or on non-stick griddle, also sprayed with pam. Make sure grill or pan is hot to start or the patties will stick. Grill on both sides until golden brown. Serve on whole-wheat bun with lettuce and tartar sauce.
