Introduction

Modified version of a recipe I found in EatingWell magazine. Modified version of a recipe I found in EatingWell magazine.
Number of Servings: 2

Ingredients

    1 Tbsp EVOO
    2 cups asparagus - cut into 1 inch pieces
    2 Tbsp Brummel and Brown or similar buttery spread
    1 tsp lemon juice
    1.5 tsp curry powder
    2 Tbsp honey

Directions

Heat EVOO in skillet.
Add asparagus and cook til tender - about 3-5 minutes.
Meanwhile, melt B&B (or butter) and add lemon juice and curry - stir to mix.
Take asparagus off heat and toss/coat with curry butter mix.
Plate veggies and drizzle with honey just before serving.
