Introduction

My husband loves these enchiladas, but his version of this recipe is all fat, so I skinnied it down! I like to do this with leftover grilled chicken, but you can saute it with the garlic and chiles if you don't have any on hand. Ingredients

    1 lb of chicken, cooked
    1/3 c onion, chopped
    4 tb butter
    1 can of green chiles
    6 oz neufchatel or lowfat cream cheese
    2 tb lime juice
    1/3 c fresh cilantro, chopped
    1/2 t cumin
    1/2 t cayenne
    3 cloves garlic or 3 T dried
    1/2 c shredded cheese, to top enchiladas
    8 tortillas, whole wheat or corn

Directions

Let butter and neufchatel soften. Mix together, and add in sour cream, lime juice, cumin, cayenne, cilantro garlic and onion. Reserve about a third to pour over the enchiladas, then add diced or shredded chicken. Spoon the mixture into tortillas (you may want to warm them a few seconds in the microwave if they crack) and place in baking pan, seam side down. Pour remainder of sauce over them and top with a little shredded cheese.

    this was good, a little thick, next time I make it I will add a liltle milk to thin it out. I didnt use the peper powder or the chilies but substituted tomatoes for the chilies ....it was very good and I will make it again

    Thanks! I forgot to mention that you bake it at 350 for 30 min once you put it together, and I can't figure out how to edit it. D'oh!
