Ingredients

2 tbsp olive oil
2 links mild chicken Italian sausage, casings removed
1 cup (1 inch diced) unpeeled Yukon Gold potatoes
1/2 cup grated Pecorino Romano cheese, plus a small amount to sprinkle on top
6 large eggs
3 tbsp milk
1 tbsp butter
Directions
1. Preheat oven to 350 degrees
2. Heat the olive oil in a 10-inch ovenproof omelet pan over medium-low heat.
3. Add the sausage and cook for 5 to 6 minutes, until browned, breaking up into small pieces as it cooks. Set aside on a plate.
4. Add potatoes to the pan and sprinkle with salt and pepper. Cook for 10 to 12 minutes, until very tender and browned. Scoop the potatoes out onto the plate with the sausage.
5. In a medium bowl, beat the eggs, milk, cheese, and a dash of salt and pepper together with a fork.
6. Add the butter to the pan, lower the heat to low, and pour the egg mixture into the hot pan. Sprinkle the sausage, potatoes, and a bit of cheese evenly over the top and place the pan in the oven for about 8 to 10 minutes, just until the eggs are set.
