Introduction

This is a super quick and super easy, lightened up version of one of my family's favorite meals. This is a super quick and super easy, lightened up version of one of my family's favorite meals.
Number of Servings: 8

Ingredients

    12 oz. 93% lean ground beef
    1 C. Canned black beans
    1 C. Canned corn
    2 C. water
    1 C. Picante sauce
    2 C. Miinute Brown rice, uncooked
    1 C. Shredded mexican cheese blend
    1 C. Fat Free sour cream
    1 T. Chili powder

Directions

In large skillet, brown the ground beef. Stir in Beans, corn, water, chili powder and picante sauce. Bring to a boil, then stir in rice. turn heat down to low and cover until rice is cooked (about 5 minutes). Sprinkle with cheese, turn off heat and cover until cheese is melted (about 2 minutes). Makes 8 1 C. servings Garnich with generous dollop of sour cream.

    This was absolutely wonderful!! I added a little bit more chilli powder to kick up the spice. Other than that change, I thought it was amazing!! It was GREAT with tortillas!! :) - 5/19/09
