Introduction

Number of Servings: 12

Ingredients

    2/3 cup dry powdered milk
    6 Tbsp flour (I use rice flour mix)
    1 tsp. baking soda
    1 tsp. pumpkin pie spice
    1 tsp. cinnamon
    1/2 cup grated carrots
    2 eggs
    1 cup canned pumpkin
    12 tsp Splenda
    1 tsp. granulated sugar
    1 tsp. vanilla
    4 Tbsp raisins (not packed)

Directions

Combine dry ingredients. Mix other ingredients and fold into dry mixture. Mix well. Spray muffin tins with Pam or use paper cups. Bake 350 degrees to 20 minutes. Makes 12 muffins.

    I use this recipe too! Its very good, and fits quite well into any plan. Being fat free, the muffins do tend to toughen as they sit, but that's to be expected. - 8/12/09

    This is the same recipe I use. Have been making it for years. I use Stevia for sweetener with a T. of honey and sub dates instead of raisins.I'm a nut lover so I put in walnuts or pecans. Of course you will have to add in the calories for the nuts and honey.Love these!! - 9/29/15
