    4 carrots, sliced
    1 cup broccoli florets
    1 head of a small cabbage, chopped
    1 onion, sliced thin
    2 garlic cloves, chopped
    3 T of vegetable oil
    Salt and pepper to taste

    2 T of grated fresh ginger
    3 scallions, finely sliced

    1 lb. soba noodles (whole wheat spaghetti can be substituted)

    for the sauce:
    ½ cup of soy sauce
    1/3 cup of rice wine
    2 tablespoons of brown sugar
