Ingredients

    1.5 lbs beef tenderloin cut into bite size strips
    1 green pepper cut into strips
    1 red pepper cut into strips
    1 yellow pepper cut into strips
    1 large onion chopped
    2 stalks of celery chopped
    3 roma tomatos cut into 8 wedges each
    1 C. sliced fresh mushrooms
    3 cloves of garlic crushed
    1 T oil
    1/4 C soy sauce
    1 tsp salt
    1/2 tsp pepper
    1/4 c cornstarch

Directions

In a large frying pan
Saute onion and garlic in oil
Add tenderloin pieces and brown
Add 3 cups of water
Simmer about 10 min
Add all other vegetables except the tomatoes and cornstarch.
Simmer for 15 min.
While meat mixture is simmering, prepare rice
Mix cornstarch with 1/2 C of water (add more if needed to get a smooth thick liquid consistancy. Slowly add mixture to meat and stir until sauce thickens.
Remove from heat and add tomatoes.

Serve over rice (not included in nutritional info)
