1 1/4 whole grain pastry flour
1 1/2 teaspoons baking powder
1 1/2 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon fat-free vanilla yogurt
1/2 cup brown sugar
1 egg
2 tablespoons canola oil
1 teaspoon vanilla extract
1 1/2 cups walnuts, chopped
1/2 cup crushed pineapple in juice, drained
1/3 currants or raisins
1/4 cup grated carrots

Directions
1. preheat the oven to 400 F
2. In a large bowl, combine first five ingredients. In a medium bowl, combine the yogurt, brown sugar, egg, oil, and vanilla extract. Stir the yogurt mixture into the flour mixture just until blended. (lumps are ok) Fold in the walnuts, pineapple, currants or raisins, and carrots.
3. Divide the batter e enly among 12 muffin cups coated with nonstick cooking spray.
4. Bake for 20 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
5. Cool in pan on a wire rack for 5 minutes. Remove muffins from the pan to cool completely on the wire rack.
