Ingredients

2 boneless, skinless chicken breast cut up into bit sized pieces
1 cup bite sized cut mushrooms
1/4 cup Parmesan cheese
1/2 cup chicken broth (I used the homemade broth from the skillet, but you can use canned)
1 can low fat cream of chicken soup
1 tbsp olive oil
1 clove garlic, minced
1/8 tsp. pepper
parsley, as desired
oregano, as desired
Basil, as desired
Onion powder (optional)
Directions
1. Heat oil on low heat in large skillet, add minced garlic and other herbs and spices until garlic browns.
2. Add chicken pieces to skillet and stir to coat chicken with spice mix, turn heat to medium and cook until chicken is done (8-10 mins)
3. As chicken is cooking, cut mushrooms into bite size pieces, then add to skillet, stir, and continue cooking another 5 mins.
4. Stir in cream of chicken soup (you can add chicken broth here if you don't use the homemade that should already be in the pan) , and simmer on low for 2-4 minutes.
5. Stir in Parmesan cheese
I served this over brown rice (not included in the ingredient list) with a salad and it made a lovely meal.
Should make 4 to 5 servings.
