Ingredients

1-1/2 to 1-3/4 cups all-purpose flour
1 cup quick oats
1/3 cup shredded unsweetened coconut
1/4 cup linseeds (Flax seeds)
1 tbsp baking powder
1 tbsp sugar
2 tbsp unsweetened applesauce
2 tbsps honey
1 egg
1/2 cup skim milk
Directions
In a food processor, set to high and pulse
together the flour, oats, shredded coconut,
linseeds and baking powder for about 30 seconds.
In a small bowl, quickly whip together the sugar, applesauce, honey, egg and skim milk until fully blended.
If you have a dough blade on your food processor, change the blade and set the pulse speed to low. If not, transfer the flour blend to a large bowl and use your hands to work this next step.
While the processor is working on low setting, add in about 1/2 the liquid, and work for a few seconds before adding the remaining amount.
Flour your work surface and roll out the dough to about 1/8 inch thickness. Cut into 8 pieces and arrange on a baking sheet. Bake at 400F for 10-13 minutes or until they are a light golden brown. Enjoy warm!
