Healthier banana bread. Taste great! Can easily reduce the sugar too for a fine taste and reduced calories. Can also substitute applesauce for oil. Very moist. Healthier banana bread. Taste great! Ingredients

    1/2 cup brown sugar
    1/2 cup plain yogurt (nonfat)
    1egg
    3 tbs canola oil
    3/4 cup unbleached flour
    1/2 cup whole wheat flour
    1/2 cup ground flaxseed
    1tsp baking powder
    1 tsp baking soda
    1 cup pureed ripe bananas (if not enough, can mix in applesauce)

Directions

Preheat oven to 375
Grease loaf pan
In large bowl, combine sugar, yogurt, egg, and oil. Blend until smooth. In medium bowl combine next 5 ingredients. Add to liquid ingredients. Don't over mix
Add bananas. Pour into loaf pan, sprinkle 1 Tbs sugar on top.
Bake 40-50 min.

Makes 1 loaf. Serving size calculated in a 9" loaf pan with nine 1" slices. Nutrition info will change if reducing sugar or substituting applesauce for oil.
