Introduction

I was in the mood for Potato Salad, but I did not want to use Mayo. You can add or subtract the amount of Mustard or Ranch Dressing to suit your taste. Number of Servings: 12

Ingredients

    4-6 Lge Potatoes (peeled & cut into cubes)
    1/2 cup Light Ranch Dressing
    2-3 TBSP Mustard
    1-2 tsp Chicken Boullion powder
    2 tsp Garlic powder
    2 tsp onion powder
    2 tsp salt
    1/2 cup boiled eggs (chopped)

Directions

Boil potatoes in water for ten minutes or until slightly tender. Drain water from potatoes and put inot a large bowl.

Add the seasonings to the potatoes until evenly distributed.

Next, add Ranch Dressing and Mustard until evenly coated (If too dry, add an extra tsp of Ranch and/or Mustard to taste)

Top with the chopped boiled eggs and serve warm or refrigerate 30 minutes before serving.

    Also used chopped onions instead of powder and no chicken boullion. I also added a few dill pickle slices chopped up. Very tasty. My family loved it, even my daughter who is not a potato salad fan. - 4/17/10

    i was a little leary about the ranch but this was fabulous!!! I ended up boiling the potatoes for 20 minutes though and they were perfect! - 9/1/09
