Ingredients

    2 lbs lean ground beef
    1 large jar Spaghetti sauce, any flavor
    6 cups prepared instant mashed potatoes
    1/2 tsp salt
    1 tsp pepper
    2 cups shredded cheddar cheese, regular or low fat, divided
    1 can whole kernal corn, drained

Directions

Cook ground beef in large skillet until browned, drain off grease, return to pan. Add spaghetti sauce and stir well, then pour meat mixture into bottom of 13 x 9 baking pan. Set aside. Make potatoes according to package directions for 6 servings. Mix in the salt and pepper, and 1 cup of the cheese. Stir well to combine, until cheese is melted. Stir in the drained corn and mix well. Spoon potatoes over meat & sauce in baking pan, spreading as evenly as possible. Top with remaining cup of cheese. Bake in 350 degree oven for 10 to 20 minutes, until cheese is melted & lightly browned. Let cool 10 minutes before serving. Makes about 16 1-cup servings.
