Introduction

Number of Servings: 20

Ingredients

    16 oz. pasta shells
    2 c . dried 4 cheese tri-color tortellini pasta
    2 c. grape tomotoes, (I like a mix of yellow and red)
    3 c. fresh baby spinach
    1/2 c shaved Parmesan Cheese
    4 Bacon slices (center cut, lean or turkey will cut a few more calories) cooked and crumbled.
    3/4 c. low cal. creamy italian dressing
    4 oz pine nuts
    4 T. finely minced red onion

Directions

Cook pasta according to package. Drain and rinse with cold water.
Toss spinach, onion, tomatoes and pinenuts into pasta. Add dressing, toss to coat. Add shaved parmesan, toss again.
serve.
20 servings, approx. 2/3 c. (give or take depending on size of tomatoe and spinach)
