Ingredients

Portabella Mushrooms, 1cup, sliced
Spinach, frozen, 2 cup (thawed)
Onions, raw, 1 cup, chopped
Vegetable Broth,1/2cup
*Classico Sundried Tomato Pesto1/2 cup
Red pepper flakes (to taste)
*Barilla Plus Penne, 2 cups
Directions
makes 4 1-cup servings
1. Slice onions and mushrooms
2. Boil water and add pasta
3. Over medium heat, saute onions in vegetable broth until translucent.
4. Add mushrooms and cook until they are soft.
5. Add spinach, red pepper flakes, and seasonings of your choosing. Continue to cook until heated through.
6. By now the pasta should be done cooking. Drain and add hot pasta to the spinach, mushroom, and onions. Toss.
7. Add the tomato pesto and mix.
8. Divide into servings and sprinkle with parmesan cheese.
