Introduction

If you like white chocolate, and you like strawberry shortcake you will love this. It's the most luscious, rich and creamy strawberry shortcake you'll ever make.

I took this to my book studies goody night and got rave reviews. One man said, Man, I never new eating diabetic, could taste so good!

I also think it holds together better, and taste better the second day. I like to leave it overnight in the fridge before cutting into it.

Ingredients

    6 Walmart Sugar Free Dessert Shells (mini sponge cakes)
    3/4 cup (One-6 oz container) Vanilla Dannon Fit & Light Yogurt
    1/3 cup Carnation Nonfat Dry Milk Powder
    1/2 cup Splenda Granular
    1 (8-ounce) package Philadephia fat-free cream cheese
    3/4 cup Cool Whip Free
    1 (4-serving) package JELL-O sugar-free instant white chocolate pudding mix
    1 1/2 cups cold water
    1 quart fresh strawberries, hauled and sliced
    1/2 teaspoon unsweetened cocoa

Directions

Cut sponge cakes in half. Evenly arrange bottom halves in an 8-by-8-inch baking dish. Set aside. In a medium bowl, combine yogurt and dry milk powder. Gently stir in 1/4 cup Splenda and Cool Whip Free. Set aside. In a large bowl, stir cream cheese with a spoon until soft. Fold in 1/4 cup Splenda and 1 cup yogurt mixture. In a medium bowl, combine dry pudding mix and cold water. Mix well using a wire whisk. Add pudding mixture to cream cheese mixture. Mix gently to combine. Arrange half of the sliced strawberries on top of cake halves. Spread half of cream cheese mixture over top. Repeat layers, spread remaining yogurt mixture over top. Evenly sprinkle top with cocoa. Cover and refrigerate at least 2 hours. Cut into 6 servings.

    I'm fairly new to cooking, is there a way to make this dessert without using the dry milk powder? I noticed a lady mentioned she used skim milk instead, how would I do that? - 11/18/09

    It will not be as thick & rich. Some think it doesn't taste good. Usually because 1. They did NOT use Carnation brand, 2. It was NOT fresh. Dry milk goes rancid when not stored in the fridge.

    Try it once making sure to use NEW Carnation dry milk, it will be thick & rich. I'm sure you'll love it!

    Incredible!
    This was wonderful! I used 12 individual spongecakes and 1 lb. of strawberries in a 9x13 pan. I used the same amount of the other ingredients. There was still plenty to cover in the bigger pan. I also used skim milk instead of the dry milk and water. Instead of Splenda, I used 1/4 cup of sugar. - 7/2/08

    It was a hit but tasted much better 2nd day. Do you mix water into the jello pudding or skim milk? The recipe says water but there is none lited in ingredients. - 5/23/08

    Sorry for the long delay in replying, I just noticed I didn't reply. I fixed the recipe, and it now lists the water. There is no skim milk in the recipe, only dry milk powder and water.
