Introduction

A lower calorie potato salad when using a lower calorie mayonnaise. I use Best Food's Canola mayonnaise. It taste great and doesn't have soy oil in it that my husband is allergic to.

A lower calorie potato salad when using a lower calorie mayonnaise. I use Best Food's Canola mayonnaise. It taste great and doesn't have soy oil in it that my husband is allergic to.

Number of Servings: 32

Ingredients

    5 lbs. potato - peeled - cooked - diced
    1/2 medium onion - chopped
    1 cup pickles - diced (dill is used most often, but sweet is fine too)
    9 eggs - boiled - chopped
    1 Tbsp. mustard
    3/4 quart of Mayonnaise (Best Foods Canola)
    salt and pepper to taste
    paprika - sprinkle this on top when done.

Directions

Put all ingredients into a large bowl. Mix well. Sprinkle paprika on the top. Let set in refrigerator overnight to let the flavors blend together.

makes about 16 cups of salad
