Introduction

Flavorful zucchini, red and yellow peppers served on top of chicken marinated with herb and garlic marinade. I got this recipe from the Mrs. Dash website but I couldn't find the Mrs. Dash Herb and Garlic Marinade so I just used Lawry's brand and it turned out great. This recipe is incredibly simple to make with virtually no clean up and the best part is it's low fat and low carb! Ingredients

    4 chicken breasts
    Lawry's Herb and Garlic Marinade (16 tbsp)
    1 medium zuchinni (sliced)
    1 yellow bell pepper (diced)
    1 red bell pepper (diced)
    a sprinkle of parmesean cheese (optional)

Directions

Preheat oven to 350.
Put each chicken breast on a piece of aluminum foil (a piece of foil that is big enough to encase it)

sprinkle 1/4 of the amount of each vegetable on top of the chicken

Pour 4 tbs of marinade over each breast making sure to coat the veggies as well

sprinkle parmesean cheese on each breast if desired

gather each piece of foil loosely around the chicken leaving a little room for steam to escape

put all 4 pouches on cookie sheet and bake for approx 30 minutes or until chicken is done

Can pour the contents of each pouch over rice or whatever you prefer

    Incredible!
    I found I had to cook this for an hour at 350. Other than the minor set back in dinnertime, it was wonderful! I used precut diced pepper and onion mixture to help with prep, and we had brown rice on the side. Great meal. - 2/28/10
