Ingredients

    1 Large Zucchini, cut into 1/2-inch pieces
    1 Large Summer Squash, cut into 1/2-inch pieces
    2 C. Cherry or grape tomatoes, halved
    1 C. Feta cheese, finely crumbled
    2 t. Dijon mustard
    2 T. Balsamic or red wine vinegar
    2 T. Fresh lemon juice
    2 T. Shallots, minced
    1 T. Extra Virgin Olive Oil
    2 T. Fresh Basil, chopped fine
    .5 t. Salt (or to taste)
    1 t. Black Pepper (or to taste)

Directions

Steam zucchini and summer squash for about 3 minutes, or until their colors turn bright. Remove from heat and run under cold water to stop the cooking process. Drain thoroughly and put into a large bowl with halved cherry tomatoes.

In a small bowl, whisk Dijon mustard, vinegar, and lemon juice together. Add shallots, and basil and slowly whisk in olive oil. Season with salt and pepper. Gently toss dressing in with zucchini, summer squash, feta cheese, and tomatoes.
