Introduction

My kids love this dish. It's a great way for kids to eat more veggies. They get their lettuce as a fun scoop for their meat and they get to eat with their hands. Ingredients

    1 1/4 lb lean ground pork

    Pork seasoning (mix together)
    2 Tbs soy sauce
    1 1/2 Tbs rice wine or sake
    1 1/2 tsp toasted sesame oil

    Spicy Seasoning (mix together)
    3 Tbs minced fresh ginger
    4 Tbs minced garlic
    1 3/4 tsp hot chili paste or to taste

    3 cups scallion greens, cut into chopped
    3 cans water chestnuts, chopped coarsely

    Fragrant Sauce (mix together)
    5 Tbs soy sauce
    3 1/2 Tbs rice wine or sake
    2 Tbs chinese black vinegar or Worcestershire sauce
    1 Tbs sugar
    1 tsp salt or to taste
    1/4 tsp fresh ground pepper
    1/2 cup chicken stock
    1 tsp corn starch

Directions

First: Put ground pork in a bowl, add pork seasoning and mix together with our hands

Second: Lightly flatten the lettuce with flat side of a knife or cleaver and arrange around the outside of a large platter or in a separate basket for serving.

Third: HEat a wok or a heavy skillet, add 1 1/2 tsp of the oil and when hot but not smoking, add the ground pork and stir-fry over medium-high heat, mashing and breaking it up. Cook until it changes color and separates. Drain in a colander to remove the fat and wipe out the pan.

Fourth: Reheat the pan, add the remaining oil, and when hot, add the spicy seasonings. Stir fry until fragrant, about 30 seconds and add the scallions and water chestnuts, tossing the mixture over high heat for about 1 minute. Add the premixed Fragrant Sauce and stir, letting it thicken. Return the cooked meat to the pan and toss to coat with sauce. Scoop mixture onto serving platter. Each diner spoons some of the cooked meat mixture onto a lettuce leaf, rolls it up and eats.
