Number of Servings: 25

Ingredients

    1Cup plus 2 TB white flour
    1 Cup plus 2 Tb whole wheat flour
    1.5 cups oatmeal
    2/3 cup sugar
    2 TB double acting baking powder
    1 tsp salt
    2 cup skim milk
    2 eggs or egg beaters(1/2 cup)
    1/2 C vegatable oil
    2 cups blueberries
    toppping: 1 tsp cinnamon mixed with 2 TB sugar

Directions

Preheat oven 425
in large mixing bowl mix flours, oats, sugar, baking powder, salt.
in medium mixing bowl using fork, combine milk, egg, and oil.
Add to flour mixture and beat until blended. Fold in blueberries. Pour into sprayed muffins cups. Sprinkle with cinnamon/sugar mixture.
bake 425 for 20 to 25 minutes

    Even better for you by adding 2 T ground flax seed, .25 cup chopped pecans. Super moist, we also used cinnamon sugar to sprinkle on top. Grand daughter loved helping with all the extras we did. - 7/4/09

    Very Good
    Will definitely make this recipe again! I did add the chopped nuts that the last user suggested. I also half-ground the oatmeal. The muffins are nice and moist. I may try using applesauce instead of sugar next time. Very easy! - 10/15/09
