Ingredients

    1 box jiffy corn muffin/bread mix
    1 medium egg
    6 Tbsp fat-free sourcream
    1/2 c 2% milk shredded Mexican blend cheese
    1/4 c old el paso sliced jalapenos, drained
    Half of 1/3 c organic skim milk

Directions

Spray glass pie plate with Pam; Preheat oven to 400
Combine muffin mix, milk, sour cream and egg; mix until well blended and smooth
Stir in cheese and jalapenos; Let sit 5 minutes before pouring into glass pie plate

Bake at 400 for 20-25 minutes
