Ingredients

    small head of cabbage
    2 c green beans
    2 c bean sprouts
    pack mushrooms 16 oz
    2 packs green onions
    3-4 stalks of celery

Directions

Put your chicken on to boil. You'll need a really big bowl and start chopping. Throw everything in together. The quantities are approximations. I usually just eyeball it. Once the chicken is done de-bone it and chop it or shred it and season liberally with soy sauce. Put in with everything else and you are ready to make the egg rolls. Get a bowl of water and put some corn starch in it. It will help seal the wrappers. Place some of the mixture in the middle of the wrapper and fold the ends in. It will be square. You can make it traditional eggroll shape, but it doesn't hold as much. Place it in a pan of hot oil and cook until golden brown. Have a pan with a rack to place ready egg rolls in. You can make your own hot mustard with regular mustard and tabasco, just season to taste and enjoy!
