Ingredients

1 TBS Olive oil
1 medium onion, chopped
1 carrot, chopped
1 cup chopped celery
4 cloves minced garlic
1 red bell pepper, chopped
2 qts (8 cups) vegetable or chicken stock, low sodium
1-29 oz can crushed tomatoes
1 can chick peas (garbanzo beans)
2 cups water
1 small head cabbage, thinly sliced
hot pepper sauce
salt and pepper
Directions
Heat oil in large pot to medium high heat. Add onion, cook 5 minutes, stirring occasionally. Stir in carrot, garlic, bell pepper, celery, cook until tender. Add stock, tomatoes, water and cabbage, simmer uncovered for 20 minutes. Add garbanzo beans. Season to taste with hot sauce and salt and pepper if desired. Garnish with parsley or cilantro if desired.
Time saver tip: Use cole slaw mix from the produce section and frozen chopped vegetables from the freezer. ie chopped peppers and onions.
