Ingredients

    2 Bell peppers (capsicum), diced. Yellow is good but recipe works with any colour.
    1 Medium onion, diced.
    2 tspn Olive oil (can use less if desired)
    250ml white wine (optional)
    1 chicken stock cube (use to taste)
    200g pasta
    Parmesan cheese to taste

Directions

Recipe is for 2-3 servings

Heat water for pasta.
Finely dice bell peppers and onion.
Add oil to a deep sided frying pan, and once hot add onions. Cook until softened and browning.
Add bell peppers and cook until softened.
Add wine and allow to reduce over a medium heat.
If desired add chicken stock cube (if using a liquid stock, omit wine)

Once pasta is cooked, add to sauce and toss. Add some parmesan cheese and serve hot.
