Ingredients

2 boneless, skinless chicken breasts, chopped
1/2 onion, chopped
1/2 green bell pepper. chopped
2 cloves garlic
16 oz fat free, low sodium chicken broth
1 (14.5 oz) can petite diced tomatoes
1 (15 oz) can tomato sauce
1/2 TBLS firmly packed brown sugar
1 tsp itatian seasoning
1 cup whole wheat elbow macaroni
2 oz grated asiago cheese
1/2 cup Italian seasoned croutons (fat free)
2 oz shredded mozzarella cheese
Directions
In a large dutch oven, combine chicken, onion, bell pepper, and garlic; cook over medium-high heat, 8 - 10 min, stirring occasionally until chicken is browned.
Stir in broth, diced tomatoes, tomato sauce, brown sugar, Italion seasoning, and salt. Bring to a boil over medium-high heat; reduce heat, and simmer 15 min. Add noodles, and simmer until noodles are tender. Stir in Parmesan cheese.
Preheat broiler. Ladle soup into 4 ovenproof bowls. Top with 2 tbls croutons; sprinkle with 1/2 oz. mozzarella cheese. Broil soups, 6 inches from heat, 3-4 minutes, or until cheese is browned and bubbly. Serve immediately.
