Ingredients

    1 minced garlic clove
    1/2 c. diced onion
    1/2 c. diced celery
    1/2 c. diced green peppers
    2 Jalapeno peppers, seeded and chopped
    1 14.5 oz. can Hominy
    1.4 lb. chicken thighs cut into bite size pieces
    1 c. Swanson's Natural Goodness Chicken Broth (fat free, 33% less sodium)
    1/2 tsp ground cumin
    1/4 tsp black pepper
    1 lime cut into 4 wedges

Directions

In Dutch oven, saute garlic, onions and chicken pieces in canola until onions are transluscent and chicken is lightly browned. Add celery and peppers, stirring while the vegetables become crisp tender. Add remaining ingredients except lime. Cover, reduce heat to simmer.

Serves four. Spoon into bowls and serve with wedge of lime. Garnish with fresh cilantro if so desired.
