Introduction
A delicious light and refreshing summer salad. Great for picnics as it doesn't need to be kept cold. Serve with topped with feta cheese to complete the flavors. Makes eleven one cup servings. Ingredients

1.C Coucous
30 Olives
1 Red Bell Pepper
1 Purple Onion
2 Roma Tomatoes
1 Peeled Cucumber
10 Pieces of artichokes hearts marinated in oil
One bunch of Cilantro
3 cloves of garlic
Pepper to taste
Directions
Boil 2 Cups of water. Put the couscous in the water, cover and remove from heat. Let sit ten minutes and then fluff with a fork.
Chop all of the vegetables and combine in a large bowl. Chop the cilantro and mince the garlic. Combine all of the ingredients and refrigerate. Top with feta cheese beforing serving.
Note: The feta cheese was not inlcuded in the calorie calculation. Please use your own taste and discretion.
