    1 medium russet potato
    1 teaspoon extra virgin olive oil
    1 pinch of salt and pepper
    Non stick cooking spray
    2/3 cup liquid egg whites
    1/4 cup Trader Joes Enchilada sauce
    2 tablespoons shredded fat-free cheddar cheese
    2 tablespoons chopped scallions
    1 teaspoon chopped fresh cilantro


Preheat oven to 375. Cut potato into 1/4 inch rounds. Coat with olive oil, salt and pepper. Spread on baking sheet in even layer.

Bake for 15 minutes or until tender.

Coat non stick pan with cooking spray and place over medium heat. Add egg whites and cook, stirring as needed. Once complete - spread the eggs over the potato. Top with enchilada sauce. Sprinkle with cheese, scallions and cilantro

    Very Good
    Made this for a late dinner tonight minus the cilantro, Trader Joes and onion. I also used a tbs of La Costena mole' which bumped the calories up by 120!

    this sounds really good. and i like that the recipe is for one. i live alone and it is so hard to cook for just one person. i always end up with more leftovers than i can eat and end up wasting a lot of food. - 6/5/09
