Number of Servings: 9

Ingredients

    1/2 box whole wheat macaroni, cooked
    1 lb. extra lean ground beef
    1/4 c. hot peppers, diced
    1 c. bell peppers, diced
    1 c. onions, diced
    3 cloves garlic, minced
    1 package taco seasoning
    2/3 c. water
    1 c. fat free sour cream
    1 can tomato soup
    4 fat free sharp cheddar slices
    1 can sweet corn
    1 c. colby jack cheese, shredded
    About 10 tortilla chips, broken

Directions

Brown ground beef with hot peppers, peppers and onions. Add taco seasoning & water and simmer for 5 minutes. In a separate pot, heat tomato soup, sour cream and cheddar cheese slices until melted. Mix ground beef mixture with sauce and corn in 9x13 baking dish. Gently stir in cooked macaroni. Top with shredded cheese and broken tortilla chips. Bake at 350 degrees for 35 minutes. Makes 9 1-cup servings.

    love it - a keeper - but would only make 8 servings for me - 5/28/09

    You're absolutely right. After making it the second time, it's more like 9 - still pretty good in calories, even with the larger serving.
