Ingredients

    Barilla Plus Rotini (2 oz, 56 grams), 12 oz
    Olive Oil, 3 tbsp
    Onions, raw, .75 cup, chopped
    Red Ripe Tomatoes, 1 medium whole (2-3/5" dia)
    Zucchini, 2 cup, sliced
    Summer squash, 2 cup slices
    Parmesan Cheese, grated, .125 cup
    Romano Cheese, .5 oz

Directions

Boil water for pasta.
Heat olive oil over very low heat.
Dice onion and tomato, add to heated oil. Let cook 1-2 minutes, and then remove from heat.
Slice and steam zucchini and squash (with italian seasoning to taste).
Cook and drain pasta. Return to pasta to pot and add squash and oil, onion, and tomato mixture. Top with grated parmesan and romano cheeses. Mix and serve!
