Introduction

I like a curried chicken salad with grapes and cashews. I don't have any grapes. I don't have any cashews... I like a curried chicken salad with grapes and cashews. I don't have any grapes. I don't have any cashews...
Number of Servings: 4

Ingredients

    8 oz Chicken, shredded
    1/4 cup blueberries
    1/4 cup pecans, diced
    1/4 cup onions or green onions
    2 tsp curry powder
    enough mayo to make it stick together (4 tbsp-ish)

Directions

Place all ingredients into a bowl.

Mix.

Eat.

This is SO GOOD! I'm going to use almonds instead of pecans next time.

  • In the picture it appears that there is feta cheese (or something similar) in the recipe. It doesn't look like mayo.
    Clarification would be helpful.

  • Sounds yummy! I'm usually short on protein at the end of the day, so I might up the amount of chicken and switch to light mayo to reduce the fat. Can't wait to try this! - 2/20/13
